Chef Xavier is a fifth generation French pastry chef, born in Reims, Champagne. His wife, Karen is a western Pennsylvania native who went to Penn State U. and Carnegie-Mellon U. before meeting her future husband in suburban Washington DC (Olney, MD), where they operated a bakery for 20 years and raised a family before moving to Portsmouth, RI. They have operated the store in Middletown since 2011 and now added a sixth generation, Xavier Jr., to continue the tradition.
